Fruitcake Cookies

These are my favorite cookies. I make the first double batch for Thanksgiving and usually a triple batch in December. Chock full of fruit and nuts, they are chewy and crunchy.
1 c Raisins
1 c Candied cherries; coarsely chopped (red only NO yucky green ones)
1 c Candied pineapple; coarsely chopped
1 c Dates; coarsely chopped
1 c walnuts; coarsely chopped
1/2 c Shortening; “golden flavor”
3/4 c Sugar, granulated
1 Egg
1 ts Vanilla
1/2 ts Almond extract
1 1/4 c Flour, all purpose
1/2 ts Baking soda
1/2 ts Salt
Combine fruit and nuts. Mix well. Cream shortening, sugar, egg and flavoring on medium speed of an electric mixer until light and creamy. Combine flour, baking soda and salt. Add to creamed mixture, beating on low speed until blended. Stir in fruits. Mix well. Drop dough by heaping teaspoonfuls onto greased baking sheet. Bake at 350F for 10-12 minutes or until golden.
MAKES: about 3 dozen cookies. Freezes well.

Mmmmmm…..These cookies are really, really goooood. Everyone always makes jokes about fruitcake (that there’s really only one of them in the world, and it keeps being re-gifted over and over…!)
but these little gems are so yummy. I got a surprise box full of them one christmas season, from Dsis in Alaska. It was such a pleasant and unexpected surprise, I’m afraid I started gobbling them right down! Of course it made me miss her all the more, but I cheered myself up by offering me a cookie!
Hmm. I wonder if she wanted that Tupperware container back…
Make these, you will be happy you did. (Also good if Old Fashioned Rolled Oats added, for fiber and texture)

Just searching for Fruitcake Cookie recipe… not able to locate mine right now… enjoyed your pics of the pony and goats! Cute..
kids too!!! We have horses and mules so the mini caught my attention. Just wanted to post a note to you! I cook all the time but get really to thinking about the baking and sharing with the holidays coming up!
